Tender, rich, and incredibly easy—this is the go-to way to turn lamb shanks into a fall-off-the-bone meal.

Ingredients:

  • 2 lamb shanks

  • Salt & pepper

  • 1 tbsp oil (or tallow 👀)

  • 3–4 garlic cloves, smashed

  • 1 onion, chopped

  • 1 cup broth (beef or chicken)

  • 1 cup water

  • Optional: rosemary or thyme

Instructions:

  1. Preheat oven to 325°F.

  2. Season lamb shanks with salt and pepper.

  3. Heat oil in a heavy pot or Dutch oven and sear shanks on all sides until browned.

  4. Remove shanks and sauté onion and garlic until fragrant.

  5. Add broth and water, scraping up any browned bits.

  6. Return shanks to the pot, add herbs if using, and cover.

  7. Cook in the oven for 2.5–3 hours, until meat is tender and falling off the bone.

Serve with: potatoes, rice, or crusty bread to soak up the juices.
